Easy Overnight Blueberry Oats & Chia Seed Pot

If you struggle to come up with breakfast ideas or have no time in the morning to prepare something before you embark on your busy day, why not put together this simple breakfast the night before.  I often do this and it's such a nice surprise to open the fridge in the morning and there it is waiting for you.

Ingredients:

  • A large spoonful of jumbo (preferably organic) oats
  • A large spoonful of chia seeds
  • Nuts or seeds of your choice (here I have used flaked almonds)
  • A few raspberries
  • A few blueberries
  • Milk of choice
  • A small spoon of natural yoghurt or kefir as an optional extra

Method:

Take a small jar.

Place the ingredients in the jar leaving the blueberries to last.

Add the milk (enough to just cover)

And top with a small spoon of natural yoghurt or kefir as an optional extra

Seal the jar or cover with film and place in the fridge overnight and enjoy in morning.

 

 

Benefits:

A good source of protein, fibre as well as antioxidants contributing towards a healthy gut as well as containing properties that can help reduce inflammation in the body.  Chia seeds add texture and are loaded with nutrients.  They have a lot of omega three fatty acids which is good for heart health.
